Hi, I’m Ellen — the creator, baker and proud owner of Jollie Macarons.

At Jollie Macarons, we’re all about creating the finest macarons in Perth. Though my background is in industrial chemistry, my true passion has always been baking. I love bringing the precision and creativity I learned in the lab into every sweet treat I make.

My baking journey began in 2013, shortly after I arrived in Perth. I started as a self-taught baker, sharing cakes and treats with friends and family. Their encouragement inspired me to start my own business. While I initially focused on cakes, I quickly discovered my true love: macarons.

The turning point came when I added French macarons to one of my cakes and was captivated by their delicate beauty. From that moment, I immersed myself in mastering the art of macaron baking. After countless experiments and tweaks, I developed my unique macaron recipe — bigger, bolder, and full of flavour.

Every macaron and cake I make is crafted with care to celebrate life’s special moments. Whether it’s a small indulgence or a big celebration, I hope Jollie Macarons can be part of your cherished memories.

Hi, I'm Jonas, Ellen's husband and the creator of the JollieCoin.

I am an electrical engineer with 30 years' experience in the engineering and manufacturing industry. Having been in crypto since 2020, I believe blockchain technology can empower small businesses in new ways. Beyond using crypto as a payment method (which already helps reduce high transaction fees), I saw an opportunity to use crypto as a funding tool, a customer loyalty system, crowdfunding reward and a way for anyone, anywhere in the world, to participate in the success of a small business like Jollie Macarons.

JollieCoin was born out of a simple but powerful idea: to help grow my wife business, Jollie Macarons. Ellen makes what I truly believe are some of the best macarons in the world, and I’m not just saying that because I’m her husband. The many glowing reviews on Google back it up!

Ellen has a gift for crafting unique flavor combinations that keep customers coming back for more. The beauty of her business is that macarons are highly scalable. However scaling requires investment in marketing, equipment, and production capacity, without compromising quality.

What excites me most is the idea of building a community that grows with us. Jollie Macarons is currently a small, local company in Perth-Australia, but there’s huge potential.
